Red, White, and Green Salad Recipe

Serves: eight, Done in: 30 minutes

Ingredients:

For the Dressing:

4 scallions (dark green tops only), thinly sliced, 1 jalapeo pepper (seeds removed), chopped, 1/4 cup(s) (loosely packed) cilantro leaves, 2 tablespoon(s) fresh lime juice, 1/4 teaspoon(s) kosher salt, 1/4 cup(s) extra-virgin olive oil,

For the Salad:

1 avocado, peeled and sliced into bite-size pieces, 1 head(s) (12-ounce) butter or Boston lettuce, 12 cherry tomatoes, reduce in half, 1/4 cup(s) (loosely packed) cilantro leaves, three ounce(s) ricotta salata, 4 scallions (white parts only), thinly sliced,

The Making:

Make the dressing: Position a small food processor or blender above the table, and then toss in scallions, 1 teaspoon jalapeo pepper, cilantro, lime juice and salt. Process to incorporate all of these dressing ingredients. Keep processing while adding the olive oil until eventually dressing gets adequately mixed up. Taste and set flavors as well as spiciness with the addition of more jalapeo, but make sure never to put far too much.

With any medium-sized container, scoop out about 50 % of the dressing and then mix into avocados. Set aside mixture. This may prevent the avocado from turning brown.

Fix salad simply by assembling lettuce leaves on the base part of any huge container or platter. Assemble tomatoes, and then a surface of cilantro leaves. Mash ricotta salata, drizzle over the salad and after that mix with scallions. Properly pour avocados in the center. Serve the rest of your dressing near the salad.

2. Add the remaining ingredients into the salad blend. Stir to integrate and then store in refrigerator to chill perfectly prior to serving.
